Anyone who has the opportunity to visit Elizabeth’s Grand Antique Co. in Elizabeth, Illinois, not far from Galena, should definitely do so. It’s a place not to be missed: an entire schoolhouse loosely converted into a series of exhibition spaces for traders from near and far; Visitors can browse through old classrooms, wide corridors and a parquet-lined gym with an old lecture theater stage. It was in a kitchen show on the stage itself that I recently found a thick, bright yellow volume: the 1981 edition of Betty Crocker’s Microwave Cookbook. At only $ 5, I was sure it had wisdom to share with me.

Even if I never end up doing anything in the book, it is so useful to be reminded of all the things that can theoretically be done without a stove, oven, Instant pot, or Hot air fryer. The idea of Prepare entire meals from scratch in the microwave has gone out of style, but that doesn’t mean people don’t still do it and that companies aren’t still promoting that idea; In 2021, Betty Crocker’s website still has a solid list of Microwave-based recipes, with some blessed updated photographs – the 1981 cookbook features that traditional way of mid-century food styling, with chicken a la king forks floating seductively over a pitch black background, as if in the kitchen halfway through the shoot the power would have failed. Well, it’s all natural sunlight on marble surfaces, and I have to say, some of the recipes look and sound downright delicious. Who would say no to some chicken coated with chilli or sweet and salty microwave fondant? To me, the microwave is the kitchen appliance whose infinite usefulness is hidden in sight, and I could always use a reminder of all the wonders it is capable of.
